The journey of premium dried apricot begins in the orchards of Malatya, Turkey. Fresh apricots are carefully hand-harvested at peak ripeness between July and August. Only the finest Malatya apricots (Prunus armeniaca, locally known as Malatya Kurusu) are selected for dried apricot production. These apricots are renowned worldwide for their superior sweetness, aroma, and golden color.

Sun-Drying & Processing

Traditional dried apricot production in Turkey involves laying pitted apricots on special drying trays under the intense Malatya sun. This natural sun-drying process takes 5-7 days and produces dried apricot with a characteristic chewy texture and concentrated sweetness. Modern dried apricot facilities like IFS Food also use controlled dehydration technology to ensure consistent quality, food safety, and year-round production capacity.

Sulphured vs. Unsulphured Dried Apricot

Dried apricot comes in two main varieties based on processing method. Sulphured dried apricot is treated with sulphur dioxide (SO2) to preserve the bright golden-orange color and extend shelf life. Natural (unsulphured) dried apricot is produced without any chemical treatment, resulting in a darker brown color but a purer, more intense apricot flavor. Both types of dried apricot are equally nutritious.
